I know, I should write more frequently, but I just was too busy with my daytime job (yes, I still have one!) and with my newest project at strawberry-recipes.com.

Autumn has arrived here in Europe and it started having this ugly weather I hate so much: rain, fog and cold! I envy everyone who can live in a warmer part of the world.

You all know that the flu and many other ailments are a constant danger for your health. Even though a vaccine is recommended only for risk groups, you can protect yourself by taking high quality vitamins, eating a healthy diet and wearing adequate clothing. 2. Flu Vaccine and Your Immune System

It's not my place to suggest if you should have a flu vaccine or not. This is an issue between you and your health professional. I personally wouldn’t have one because I think there’s more risk than reward. (But maybe it’s only because I’m afraid of shots :-) ).

Typical side effects are sore throat, coughing, runny nose and nasal congestion. It’s like having a “small” flu!
And it should only be taken by HEALTHY people who do not have compromised immune systems. This is somewhat ironic given that these are the very group of people who are the least susceptible to the flu. It is those people who have sub standard immune systems that are most at risk and these people should not take this product.

There’s another risk coming from the additives like thimerosal (a derivative from mercury) that are included in vaccines as a preservative.

However there are other steps to avoid becoming a flu victim. If you adopt them your chances of coming down with the flu are considerably lessened and in the event that you do succumb to it your recovery will certainly be much quicker and the impact less severe.

The key in avoiding the flu and many other ailments is building a strong immune system. The importance of a strong immune system goes way beyond protection from flu and virus's. Without a healthy immune system your whole body will not function properly.

Here are the steps that you need to take to achieve a healthy immune system:

1. Get adequate sleep.
2. Eat a nutritious diet.
3. Maintain a reasonable level of exercise.
4. Avoid stress.
5. Supplement with nutrients that have a scientifically proven record for building up immune systems.

Many natural ingredients have been found to be effective immune boosters, i.e. various vitamins or herbal extracts. However, the four most effective substances are:

• Mucilagionus Polysaccharides from Aloe Vera
• Beta Glucan
• Maitaki mushroom extract
• Black Cumin extract

Not all Aloe Vera's are the same...

Even with the beneficial Aloe Vera extract you cannot be sure to have an effect of your immune system, unless you use the type that is harvested and prepared in a special way which involves spray drying and concentrating to 200:1. As you can imagine the common aloe vera extract you can usually buy is much less expensive, but doesn’t have the same beneficial effects.

If you follow at least two or three of the steps laid out in this article, you have a very good chance of seeing the winter through free from colds and flu's.

3. Vegetarian Lasagna

Makes: 6 servings

Ingredients:

- 1 tablespoon olive oil
- 2 onions, chopped
- 2 garlic cloves, crushed
- 2 carrots, chopped
- 1/2 cup celery, chopped
- 1 red pepper, chopped
- 9 whole mushrooms, chopped
- 6 tomatoes, chopped
- 2 tablespoons tomato paste
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 3/4 cup soft tofu
- 3/4 pound lasagna noodles
- 1/4 cup seasoned breadcrumbs
- 1-1/2 tablespoons non/lowfat Parmesan cheese, grated

Directions:
- Heat oil in a nonstick skillet over medium heat and sauté first 5 ingredients for 5 minutes. Add mushrooms and cook 1 more minute.

- Stir in next 4 ingredients and bring to a boil over medium-high heat.
- Reduce heat to low and simmer for 10 minutes. Remove from heat.

- Beat tofu until smooth. Stir 1/4 cup tofu into vegetable mixture.

- Cook pasta according to package directions.

- Spread a third of the vegetable mixture into 9×13-inch casserole dish coated with nonstick cooking spray (nonfat). Top with a layer of pasta.

- Continue layering vegetable mixture and pasta, finishing with a layer of pasta. Spread remaining tofu evenly over pasta. Combine breadcrumbs and cheese and sprinkle over lasagna.

- Bake at 350 degrees F for 50 minutes.

- Protein: 17 g
- Carbohydrates: 45 g
- Fiber: 10 g
- Sodium: 130 mg


4. Succeed by Knowing what you want

Possibly the most important quality or skill you need to succeed at anything in life, whether it be getting in shape, excelling in your job, beating an illness or just plain being happy is a dogged commitment to doing it.

Ninety five percent of the time, people don't reach their aims because their resolve to get there was never very strong to begin with.

If you don't believe you'll get to your destination, how much effort will you ever be willing to put in? I mean, if you want to lose 20 pounds or 200 pounds and you've "tried" dozens of times only to ultimately quit trying, then what kind of effort will you be likely to put in this time?

Right. Not much.

The secret is your belief and your commitment.

How many times have you had some outcome that was an absolute must. You simply HAD TO GET IT DONE. The consequences of failing would be too great. At least in your mind, they were great. So...

You got it done! You worked all night. You rallied the troops. Your whole being was into it. There was simply no turning back. Failure was not an option...

And you succeeded.

Tell me, during those times when you rose to the challenge, was there much doubt about the ultimate outcome? Probably not, huh? You just knew that success was imminent, didn't you? Well, that's what happens when you're totally committed to a goal...

...AND when you're clear on exactly what you want.

To succeed at anything, keep your inner voice positive. Tell yourself you can... constantly. Every hour. At critical moments of decision.

Talking about belief and resolve: You've no doubt all heard the stories about people who exhibited amazing feats of superhuman strength and picked up a vehicle just enough to help rescue another person pinned underneath.

And what about those tireless rescue workers who simply won't let themselves stop until they find one more survivor. They have their outcome set and they're doing everything to achieve it.

Now, in our everyday lives, that kind of schedule is usually not required and definitely not healthy, but the principle is the same. Keep your eyes on the goal. Every minute. Every hour.

If you do, then you won't be wasting precious time on non- essential tasks. You'll keep yourself from feeling the agony of failure. Because if your resolve is strong, when you do meet those temporary setbacks, you'll see them as that...temporary.

When your determination is weak, each setback looks like the end.

So look at your next project, and the one after that, and even the one after that, and start talking yourself into doing what you must. Tell yourself that you're up to it.

Make it a must.
